Scrumptious Sunday - Crockpot Lasagna

















I made this crockpot Lasagna that I had found on my friend Meghan's blog. I liked it so much that I decided to make it with my own twist. Although, I've yet to find a gluten free pasta that I like to make it as good as lasagna normally is but we're trying. Pasta is one of the things that I really miss having with being low carb and gluten free.

Crockpot Lasagna:
*Ingredients:
1. 1 lb. ground turkey
2. 1 tsp. Italian seasoning
3. minced garlic to taste
4. 1 (28oz) jar spaghetti sauce
5. One box no cook Brown Rice Lasagna Noodles
6. 1 carton fresh sliced mushrooms
7. 1 bag of frozen spinach
8. 1 (15oz) carton ricotta cheese
9. 2 cups shredded mozzarella cheese
10. grated Parmesan and Romano cheese

*What to do:
1. Brown meat and seasoning, drain.
2. oil the crockpot with 1TB olive oil
3. Place 5 uncooked noodles in lightly greased pot.
4. Layer with 1/2 the turkey mixture, sauce, spinach and mushrooms.
5. Spread evenly with ricotta cheese and sprinkle with 1 cup mozzarella.
6. Layer with remaining noodles, turkey mixture, sauce, spinach, mushrooms, and mozz. cheese.
7. Sprinkle the top with grated Parmesan and Romano cheese
8. Sprinkle w/ Italian seasoning
9. Cover, cook on high for 1 hour.
10. Reduce heat and cook on low for 5 hours.

Scrumptious Sunday - Crockpot Asian Peanut Butter Pork

I'm just going to post a link to one of my favorite crockpot recipes. The only change I've made to this recipe is that I use Almond Butter instead of Peanut Butter. This recipe comes from one of my favorite food blogs.

Scrumptious Sunday - Broccoli Salad


I'm back from a little vacation and remembered one of my favorite summer salads.

Broccoli Salad
1 large head fresh broccoli, cut into bite-sized pieces (stems discarded)
1/2 cup raisins
1/4 cup diced onion
1 cup mayonnaise
2 TB. vinegar
1/4 cup sugar
8 slices of bacon, crisply fried
1 cup shredded cheddar cheese

Combine the broccoli, raisins and onion in a serving bowl. In a small bowl, mix together the mayonnaise, vinegar and sugar and mix well. Pour over the broccoli mix. Refrigerate for 3-4 hours or longer to soften the raw broccoli. Thes can be made a day ahead and I actually prefer overnight. When ready to serve, crumble the bacon on top and sprinkle with shredded cheddar cheese. Leftovers keep well in the fridge if you have any!

Scrumptious Sunday - Cold Quinoa Salad


Every Sunday I'm going to post a recipe... most of them will be gluten free since gluten tends to make me sick, so don't expect too many carb loaded recipes ;)

A few days ago we were in the midst of our third day in a row of a heat advisory. There was no way I was going to do any cooking and I wasn't going to have Mark stand outside grilling. I didn't know what to make and one of my local facebook friends said she had made cold couscous salad. That's when it hit me... I should make that only I can't have couscous so I'll see if I can make something with quinoa. I just looked through my cabinets and grabbed a bunch of cans and the quinoa and started working. It was so yummy that I thought I'd try to put together the recipe for you. Since everything was just thrown together... the measurements are approximate.

1 cup uncooked quinoa, rinsed
2 cups chicken stock, veggie stock or water
2 cans kidney beans, rinsed and drained
2 cans of shredded chicken breast... I use the shredded chicken cans from Costco.
1-2 cups frozen corn kernels, thawed
1 onion chopped
3 garlic cloves
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 tablespoon grapeseed oil
salt and pepper, to taste

Cook the quinoa in the stock according to the directions on the box (I made it in the microwave since I was not in the mood to cook). While the quinoa is cooking mix together all the remaining ingredients. When the quinoa has soaked up all the liquid add it to the other ingredients. Cover and refridgerate for a couple hours until cold. Serve and enjoy!

To make this vegetarian, skip the chicken and use a vegetarian stock. It's so yummy either way!

YUMMY Crockpot Oatmeal


Based on my experiences with this recipe I found online

Ingredients

* 2 cups steel cut oats (not instant or rolled oats)
* 8 cups almond milk, or whatever liquid you like (water, cow's milk, soy milk, rice milk etc...)
* a couple spoons of coconut oil
* 1 TB. cinnamon
* 1/2 cup brown sugar
* 1 TB. vanilla
* 2 apples, peeled and diced (optional, I'm usually too lazy to peel and dice so I don't usually add it)
* 1 cup dried fruit (I prefer berries or raisins)
* your favorite toppings (banana slices, nuts, bacon etc...)

Directions

if you don't use the coconut oil spray the inside of your crockpot with Pam or some kind of oil spray or rub with your favorite oil...

Throw all the ingredients except for the toppings into your crockpot and cook on low for 3.5 - 4 hours. When done, mix it all up, scoop a bowl, top with your favorite toppings and eat. I store the leftovers in the fridge. Super easy and really yummy!
